Making pumpkin seeds after carving is something my entire family looks forward to every year! It is so simple and requires very little effort (outside of washing the seeds off). Are you ready to see how we make ours?
Here we go...
Start with rinsed seeds. No pumpkin slime allowed!
*To a large pot I added 8 cups of water and 4 cups of pumpkin seeds. If you don't have 4 cups of seeds just use a 2:1 ratio and you'll be just fine.
*Bring the water and seeds to a rapid boil and as soon as it reaches a boil I turn the flame down to low and let them simmer uncovered for 10 minutes.
*Next you are going to strain the water out of the seeds and let the seeds sit for 10-15 minutes so they are partially dry.
*Once partially dry spread the seeds onto a well oiled baking sheet. (I used extra virgin olive oil and a dark Wilton sheet.)
*Bake for roughly 20 minutes or until the seeds start to turn golden in color.
When I take them out of the oven I like to add a few shakes of sea salt. This is totally optional but very yummy!
